THE DISH

A Cajun classic with a lightened up twist, this dish is sure to excite your taste buds. Includes our Cauliflower Rice, our Eggplant Caponata and our Lemon Artichoke Quinoa Cup.

HEAT
1 tsp olive oil in a skillet over medium-high heat
COOK
1 bag Cauliflower Rice with a pinch of salt/pepper for 3 minutes
MIX IN
4 heaping tbsp Eggplant Caponata + ½ cup water + 1 Lemon Artichoke Quinoa Cup cover and cook an additional 4-5 minutes until cauliflower is tender, adding additional 1-2 tbsp sauce as needed

Ingredients for Lemon Artichoke Quinoa Cup: Quinoa, Artichoke, Sunflower Oil, Onion, Red Pepper, Yellow Pepper, Lemon Juice, Salt, Parsley, Lactic Acid, Garlic, Citric Acid, Black Pepper
