With caramelized brussels, sweet corn, green chickpeas, and plant-based cheddar, this combo makes for a colorful, flavorful, veggie-full plate. Includes our Shaved Brussels, Cashew Cheddar, and Green Chickpea Corn Medley.

Heat
1 tbsp olive oil in a large skillet over medium-high heat
Cook
1 bag Shaved Brussels with a pinch of salt/pepper for 5-7 minutes until brussels are browned and caramelized
Mix in
4 tbsp Cashew Cheddar and 1 container Green Chickpea Corn Medley and heat until warm (about 1-2 minutes)

Quick Tip: Looking for extra heartiness, or want to make this dish go further? Simply add rice or grains.
