THE DISH

An indulgent chili packed with black beans, sweet potatoes and our cashew based cheese. Includes our Sweet Potato Mac, our Cucumber Corn Black Bean Salad, and our Cashew Cheddar.

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
the Sweet Potato Mac (1 bag) for 4 minutes, then add ½ cup water and the Cucumber Corn Black Bean Salad (1 container), cover and cook an additional 3-5 minutes until sweet potato and black beans are tender
MIX
½ of the Cashew Cheddar (~4 tbsp), adding additional water as needed, then turn off heat
FINISH
with salt/pepper to taste
