Grain-free pasta teams up with lightly browned chicken and chickpea-based pesto in this flavor-packed dish. Includes our Spinach Garlic Chicken Sausage, Plantain Linguini, and Chickpea Pesto.

Slice
1 package Spinach Garlic Chicken Sausage into rounds
Fill
a large pot with 3 quarts water and bring to a boil, then gently loosen 1 package of Plantain Linguini with hands and carefully place noodles in water
Boil
linguini stirring often for 2-3 minutes until al dente, then drain
Heat
1 tbsp olive oil in a large skillet over medium-high heat
Brown
sausage rounds (turning once) for 2 minutes or until hot
Mix in
cooked linguini and 4 tbsp Chickpea Pesto

Quick tip: Cheese, please! Sprinkle on some freshly grated Parmesan or your favorite dairy-free “cheese.”
