HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Sweet Potato Ribbons for 7 minutes, mix occasionally, until browned, then add 2 tbsp of water and cook 2-3 minutes until tender
MIX IN
4 tbsp Coconut Curry and a pinch of salt/pepper, and toss to combine
