With sweet notes of curry, an earthy bite from beets, and the refreshing crispness of snap peas, this rainbow medley is a flavorful and light summer dish. Includes our Beet Noodles, our Pea Snaps and our organic Coconut Curry.

SLICE
1 bag Pea Snaps in half
HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Beet Noodles for 2 minutes with a pinch of salt/pepper, then add ½ cup water + sliced snap peas, cover and cook for 3-4 more minutes until tender
MIX IN
4 tbsp Coconut Curry and salt/pepper to taste, then turn off heat
