THE DISH

Inspired by a Cajun classic, this lightened up side dish is quick, flavorful and acts as a versatile base for simple dinners. Includes our Cauliflower Rice and our Eggplant Caponata.

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Cauliflower Rice with a pinch of salt/pepper for 5 minutes
MIX IN
4 tbsp Eggplant Caponata + ¼ cup water, and cook an additional 2-3 minutes until cauliflower is tender

Did you know? Eggplant skin contains an anthocyanin called nasunin, which has been shown to protect cell membranes from free radical damage.
