THE DISH

A lightened up version of mashed potatoes made with cauliflower and a flavorful curry sauce, this makes a healthy yet crave-worthy side dish. Includes our Cauliflower Rice and our organic Coconut Curry. 

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Cauliflower Rice for 2 minutes with a pinch of salt/pepper, then add ¼ cup water and cook an additional 4 minutes or until tender
MIX
cooked cauliflower in a blender or food processor, then add 4 tbsp Coconut Curry until completely puréed
