This kid- and grown-up-approved take on mac and cheese has all the gooey comfort of the original, but swaps in red lentil pasta and cashew and almond-based “cheese” for a protein-rich meal. Includes our Red Lentil Fusilli and Cashew Cheddar.

Fill
a large pot with 3 quarts of water and bring to boil
Boil
1 package of Red Lentil Fusilli for 2-3 minutes until al dente
Drain
and toss with 4 tbsp Cashew Cheddar

Quick Tip: This combo is infinitely adaptable: add frozen peas or spinach for extra green, top with chili flakes for heat, or add our chicken sausage or tofu for extra protein.
