A veggie-packed spin on a childhood favorite. Includes our Sweet Potato Mac and our organic Cashew Cheddar.

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Sweet Potato Mac for 2 minutes, then add ½ cup water, cover and cook for 5-7 more minutes until sweet potato is tender
MIX IN
4 tbsp Cashew Cheddar, adding additional water as needed, then turn off heat
FINISH
with salt/pepper to taste
