A veggie-packed spin on a childhood favorite.

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
the Sweet Potato Mac for 2 minutes, then add ½ cup water, cover and cook an additional 5-7 minutes until sweet potato is tender
MIX IN
half of the Cashew Cheddar (~4 tbsp), adding additional water as needed
FINISH
with salt/pepper to taste

Serves two. Did you know? Almost all of the fat in this dish comes from heart-healthy cashews and coconut.
