Creamy alfredo tossed sweet potato pasta. Includes our Sweet Potato Ribbons, our organic Chickpea Alfredo and our Roasted Red Pepper Quinoa Bowl.

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
the Sweet Potato Ribbons (1 bag) for 2 minutes, then add ⅓ cup water and cook an additional 3-5 minutes until sweet potato is tender
MIX IN
½ of the Chickpea Alfredo (~4 tbsp), ¼ cup water and the quinoa and red peppers from one Roasted Red Pepper Quinoa Bowl, then turn off heat
FINISH
with salt/pepper to taste
