THE DETAILS

Lemongrass tofu, red lentil pasta, and tangy-sweet coconut curry join forces for a refreshing, globe-trotting dish. Includes our Braised Lemongrass Tofu Nuggets, Red Lentil Fusilli, and Coconut Curry.

Chop
1 package Braised Lemongrass Tofu Nuggets
Add
water to a large pot, bring to a boil, add 1 package of Red Lentil Fusilli, and cook for 2 minutes or until al dente
Drain
the pasta and toss with 4 tbsp Coconut Curry
Heat
1 tbsp olive oil in a large skillet over medium-high heat
Cook
tofu nuggets for 1-2 minutes until browned and hot
Mix in
with pasta and sauce

Quick Tip: For extra-crispy tofu, blot away moisture with a paper towel before sautéing.
