Sweet carrots, spicy coconut curry and a hearty lentil salad make this an incredibly flavorful yet simple meal. Includes our Carrot Chips, our organic Coconut Curry and Crunchy Carrot Lentil Mix

HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Carrot Chips for 2 minutes, then add 1/2 cup water and cook for 6-8 minutes until carrots are tender
MIX IN
4 tbsp Coconut Curry + 1 container Crunchy Carrot Lentil Mix, then turn off heat
FINISH
with salt/pepper to taste
