With bold coconut curry and silky white beans, this combination gives brussels an unexpected zing. Includes Shaved Brussels, Basil Zucchini White Bean Salad, and Coconut Curry.

Heat
1 tbsp olive oil in a large skillet over medium-high heat
Cook
1 bag Shaved Brussels with a pinch of salt/pepper for 5-7 minutes, until sprouts are browned and caramelized
Mix In
1 container Basil Zucchini White Bean Salad and 4 tbsp of Coconut Curry, then warm for 1 minute

Quick Tip: This dish is also great over brown rice or other grains (which can also soften the heat from the curry).
