CRUMBLE
2 Hearty Tofu Veggie Burgers
HEAT
1 tbsp olive oil in a skillet over medium-high heat
COOK
1 bag Zucchini Noodles for 3-5 minutes with a pinch of salt/pepper until lightly browned and al dente
MIX IN
4 heaping tbsp Eggplant Caponata + the crumbled burgers and stir to combine for 1-2 minutes, adding additional sauce as needed
