Ensure avocados are ripe (soft to the touch); if avocados are too firm, ripen faster by placing in a paper bag, 1-2 days
Thinly slice 1 package of mini cucumbers + 2 avocados
Fill a shallow bowl with warm water + dip one spring roll wrapper from ¾ of a package of spring roll wrappers into water until soft but not mushy, no more than 30 sec; move to a work surface + spread a small handful of veggies + a few shrimp from 1 package of medium cooked shrimp onto bottom third of wrapper; fold up bottom edge to cover fillings, then fold in each side + roll up, burrito-style; repeat with remaining wrappers
Divide rolls between plates + serve with a small bowl of japanese barbecue sauce for dipping—nice job!
