Cook time: 20 minutes
Preheat oven to 400°; slice asparagus into ½-inch pieces; heat 2 tbsp oil in an oven-safe skillet over med-high, add asparagus to pan, season with salt/pep + sauté 3-4 min until tender; add spinach + 2 minced garlic cloves + sauté 3-4 min until spinach is wilted; season with salt/pep
Tear 4 slices of cheese into small pieces; stir salt/pep + cheese into 1 cup eggs; pour eggs over veggies; place skillet in oven + bake 8-10 min until eggs are just set
Slice frittata + add to plates; serve with pickled onions
