Heat 4 tbsp oil in a skillet over med-high; drain 4 packages of chicken, break into bite-size pieces, add to pan + sauté 3-4 min until hot; set aside
Meanwhile, open the packages of rice to vent + heat in microwave 90 sec (careful—it'll be hot!); Divide between bowls
Heat 3 tbsp oil in skillet over med-high + sauté 3 packages of pepper mix with salt/pep 4-5 min or until soft + starting to brown; divide between bowls then top with chicken + 5 packages of avocado spread
