Cook time: 12 minutes
Pat mahi mahi dry, season generously with salt/pep + half the seasoning blend; heat 1 tbsp oil in skillet over med-high + sear fish 3-4 min one side; flip + cook 1-2 min more until fish is cooked through + flakes easily with a fork
Meanwhile, stack 4 tortillas on a plate + wrap with a damp paper towel; microwave 15-30 sec or until warm + soft; divide to plates
Heat 1 tbsp oil in skillet over med-high + cook veggie mix with salt/pep, 3-5 min until tender
Divide veggies + fish to tacos-time to eat!
