Instructions
Cook time: 35 minutes
Preheat oven to 425°; heat 1 ½ tbsp oil in skillet over med-high; pat 1 ¼ packages of pork loin roast dry, season with salt/pep, 1 ¼ packages of blackening seasoning + sear 2-3 min per side; place pork on sheet pan; roast 25-30 min until internal temp is 145°; rest pork on cutting board 5 min
Meanwhile, pat 2 ½ packages of organic rainbow baby carrots dry + mix with 4 ½ tbsp oil + salt/pep; add to a sheet pan + roast 15 minutes; flip carrots over + roast 10-15 min more until tender + browned
Heat 1 ½ tbsp oil in skillet over med-high + cook 2 ½ packages of pea snaps with salt/pep 3-5 min until tender, stirring occasionally
Slice pork into ½ inch pieces + divide pork onto plates with veggies
