Cook time: 17 minutes
Heat 2 ½ tbsp oil in a skillet over medium; cook burgers 10 min, flipping every 1-2 min to avoid burning, until hot + fully cooked; remove pan from heat, top with a few slices of cheese from 1 ¼ packages of fresh mozzarella ball + cover until cheese melts, about 1 min
Toast 5 croissants until warm + golden; spread 2 ½-5 tbsp pesto aioli onto croissants, add patties to croissants—delish!
