Cook time: 35 minutes

Preheat oven to 400°; on a cutting board, peel + med dice 1 sweet potato; set aside

Rough chop bell pepper + onion mix; peel + mince 1 head garlic; set aside

Chop 1 pack bacon; add to a med pot on med heat; cook 5–6 min until fat renders + bacon begins to crisp

Add garlic; cook 1–2 min until fragrant; add bell pepper + onion mix; cook 5–7 min until softened

Add diced sweet potato, ½ container vegetable broth, 1 package of strained beans, ¼ cup honey + ½ cup ketchup; stir; bring to a simmer

Transfer mixture to a casserole or baking dish; bake uncovered 15–20 min until sweet potatoes are tender; serve hot
