Instructions
Cook time: 29 minutes
Preheat oven to 425° + lightly oil a small baking dish; boil pot of salted water, add ½ of pasta + cook 10-12 min or until al dente, then drain + return to pot
Meanwhile, chop chicken thighs into ½-inch pieces; heat 1 tbsp oil in skillet over med-high + sauté chicken with salt/pep, 5-7 min til fully cooked + no pinkness remains
Heat 1 tbsp oil in skillet over med-high; add half of broccoli, salt/pep + sauté 4-5 min til lightly browned; add 2 tbsp water, reduce heat, cover + steam 3-5 min more until tender
Toss pasta with chicken, broccoli, 6 tbsp pesto + salt/pep; add to baking dish, sprinkle on ½ cup cheese + bake 10-15 min until cheese it melted
