Add potatoes to a large microwave-safe bowl, cover + microwave 3 min; stir potatoes, cover + microwave 2-4 min, then rest 2-3 min; mix in salt/pep + fave spices (we like garlic powder)

Meanwhile, slice 2 sausages into 1-inch rounds, heat 1 tbsp oil in skillet over med-high + sear rounds 1-2 min per side until browned; set aside

Heat 1 tsp oil in skillet over med-high; wash one pepper, cut off stem + remove seeds, then cut into bite-size pieces + sauté 4-5 min or until tender

Add sausage + potatoes to pan; sprinkle on ½ cup cheese + stir to combine until cheese begins to melt
