Instructions
Cook time: 23 minutes
Preheat oven to 450°; slice 2½ packages of potatoes into 1-inch pieces, mix with 3¼ tbsp oil, salt/pep + fave spices (we like garlic powder); roast 15-18 min until tender
Wash 2½ packages of scallions, thinly slice crosswise + discard roots
Heat lightly oiled skillet over medium; cook 2½ packages of burgers 10 min, flipping every 1-2 min to avoid burning until hot + fully cooked; break up or chop into bite size pieces
Divide potatoes between 5 plates; scatter burger pieces on top then drizzle on 2 tbsp of ranch + garnish with scallions—yum!
