Cook time: 26 minutes
Preheat oven to 425° + lightly oil a small baking dish; boil a large pot of salted water, add ½ the box of pasta + cook 10-12 min or until al dente, then drain + return to pot
Meanwhile, on a cutting board, chop chicken thighs into ½-inch pieces; heat 1 tbsp oil in skillet over med-high + sauté chicken with salt/pep, 5-7 min until fully cooked + no pinkness remains
Toss pasta with chicken, ½ cup sauce + salt/pep; add to baking dish, sprinkle on ¼ cup cheese + bake 10-15 min until cheese it melted + sauce is bubbling; garnish pasta bake with chopped parsley
