Cook time: 11 minutes
Heat 1½ tbsp oil in skillet over med-high; pat 1½ packages of shrimp dry, season with salt/pep + sauté 2-3 min until shrimp is pink, opaque + cooked through; turn off heat + drizzle with juice from 1½ packages of fresh lime + set aside
Wash + dry 1½ packages of cilantro, remove stems + roughly chop leaves; toss shrimp with cilantro
Heat skillet over med-high + add 1½ packages of rice with 1 tbsp water; stir occasionally for 2 min until warm; divide to plates
Top rice with cilantro-lime shrimp
