Cook time: 9 minutes
Break up half the pork into bite-size pieces (save remaining for lunch tomorrow); heat a skillet over med-high + sear pieces 3-4 min turning halfway through until meat is crisped + hot, then layer on 2 slices of cheese across the pork + cover 2-3 min til melted
Toast 1 baguette until warm + golden; slice in half lengthwise
Spread 4 tbsp mustard on bottom slice then add cheesy pork + a few pickles; close the sandwich, slice in half + divide to plates—dig in!
