Instructions
Cook time: 13 minutes
Pat 2 packages of pork dry, then dice into 1-inch pieces; add pork to a hot skillet or wok with 2 tbsp oil, cook for 3-4 minutes over med-high, then remove from skillet + set aside
Wipe skillet clean then add 3 tbsp oil with 3 packages of veggies + cook 2-3 min over med high heat
Add protein back in skillet with veggies + 2½ packages of coconut curry; cook 2-3 minutes more on med-high
Tear corner of the packages of rice to vent + heat in microwave 90 sec (careful—it'll be hot!); If using a skillet, warm 2 min with 1 tbsp water; add 2 packages of rice to plates + top with stir-fry
