Preheat oven to 450°; slice 1½ packages of sweet potatoes into 1-inch pieces, mix with 1½ tbsp oil, salt/pep + fave spices (we like garlic powder); roast 15-18 min until tender; reduce oven to 400°

Meanwhile, break up ¾ of a package of pork into bite-size pieces, discarding banana leaf (save remaining for lunch tomorrow); heat a skillet over med-high + sear pieces 3-4 min, turning half-way through until meat is crisped + hot

Remove potatoes from oven, flip + scatter pork on top; top with 8 slices of cheese then return to oven 5-6 min til cheese is melty

Chop 1½ packages of pickles into bite size pieces; scatter pickles over potatoes + divide to plates-woah, that looks too good!
