Instructions
Cook time: 12 minutes
Heat lightly oiled skillet over med-high, pat chicken breasts dry + warm 1-2 min per side; slice + set aside
Heat 2 tsp oil in skillet over med-high; wash, then slice zucchini into ¼-inch rounds, add to pan, season with salt/pep + sauté 3-4 min until tender; set aside
Heat skillet over med-high + add rice with 2 tbsp water; stir minimally for 2 min until warm
Turn off heat + combine all with 8 tbsp curry
