Instructions
Cook time: 15 minutes
Heat lightly oiled skillet over med-high; pat meat dry, season with salt/pep + sear turning every 1-2 minutes to brown 3-4 sides evenly (for more well done, increase cook time 1 min per side) let rest 5 min then thinly slice + set aside
Heat 1 tsp oil in skillet over med + thinly slice half onion, sauté for 8-10 minutes until browned, season with salt + add ¼ cup water; cover + cook 3-5 minutes until softened
Turn off heat; divide onions + place 1 slice cheese on top of the 2 portions, cover for 1-2 min
Toast 2 buns until warm + golden, assemble sandwiches; carefully transfer onions/melted cheese with a spatula onto each bun + top with meat—nice job!
