Instructions
Cook time: 12 minutes
Preheat oven to 425°; cut onion in half from root to stem, peel + thinly slice ½ (or whole) of onion; set aside
Divide 6 tbsp pesto + sliced onion to 2 pizzas; bake for 7-10 min
Meanwhile, toss spinach with 1 tbsp oil, splash of vinegar + salt/pep
Top pizzas with spinach when they come out of oven
