Instructions
Cook time: 18 minutes
Wash 3 red bell peppers, cut off stem + discard seeds, then cut into bite-size pieces
Wash, then slice 3 fresh zucchinis into ¼-inch rounds; heat 3 tbsp oil in 12 inch skillet over med-high, add both veggies, season with salt/pep + sauté 3 min until tender pour in 2½ packages of sauce + heat for 1 min; set aside
Pat 2 packages of fish dry + season with salt/pep + your fav spices (we like garlic powder); heat 2 tbsp oil in skillet over med-high (get that pan hot, otherwise the fish will stick) + sear fish 3 min, flip + sear another 1-2 min (for well done cook 3 min on second side)
Divide veggies to plates + top with fish
