Instructions
Cook time: 16 minutes
Heat lightly oiled skillet over med-high, pat chicken dry, add to pan in one layer + sear 2 min; flip + cook 2-3 min more until cooked through; season with salt/pep + set aside
Cut onion in half from root to stem, peel + thinly slice ½ of onion; wipe mushrooms clean + thinly slice; heat 1 tbsp oil in skillet over high, add veggies + cook undisturbed 3 min; sauté 3-4 min until browned + tender, season with salt/pep
Add chicken + 4 tbsp sauce to veggies + cook 1-2 min until warm; divide to plates + serve with a squeeze of fresh lime juice
