Remove bay leaf from pork, then chop ½ of a package of pork into 2-inch chunks; heat skillet over med-high, add pork + sauté 4-5 min until soft; break up pork using forks + sear in one layer, 2-3 min more until crisp; set aside

Heat 1 tbsp oil in skillet over med-high + cook 1 package of veggie mix with salt/pep 3-5 min until tender

Meanwhile, stack ½ of a package of tortillas on a plate + wrap with a damp paper towel; microwave 15-30 sec or until warm + soft; divide to plates

Add carnitas + veggies to tacos; drizzle each with 1-2 tbsp sauce
