Instructions
Cook time: 17 minutes
Boil a large pot of salted water, add pasta + cook 4-6 min or until al dente, then drain + return to pot, stir sauce into pasta
Meanwhile, pat chicken dry, season with salt/pep + cook in 1 tbsp oil over med-high 4-6 min per side until cooked through, no pinkness remains; slice into bite-size pieces
In a separate pan, sauté half the spinach with salt/pep 1-2 min until wilted; add remaining spinach + cook 1-2 min more until all spinach is wilted
Divide pasta to bowls; top with the protein + veg
