Cook time: 10 minutes
Toast 2 pita + cut into quarters; tear corner of rice to vent + heat in microwave 90 sec (careful—it'll be hot!); if using a skillet, warm 2 min with 1 tbsp water; divide rice to one side of bowls; divide arugula to the other side of bowls
Rinse + drain chickpeas; divide to bowls; wash tomatoes, cut in half + divide to bowls; slice cucumber + divide to bowls
Top each bowl with half of pickled onions, cubed chicken, ¼ cup hummus + ¼ cup tzatziki
Whisk 2 tbsp oil, half of seasoning packet + lemon juice then drizzle over bowls; serve bowls with toasted pita
