Cook time: 16 minutes
Heat 2 tbsp oil in a skillet over medium; crumble 1 package of grounds into the pan + sauté 5-7 min until lightly browned + hot
Wash 2 red bell peppers, cut off stems + discard seeds, then cut into bite-size pieces; heat 2 tbsp oil in skillet over med-high, add peppers to pan, season with salt/pep + sauté 4-5 min or until tender
Meanwhile, stack 10 tortillas on a plate + wrap with a damp paper towel; microwave 15-30 sec or until warm + soft
Divide fillings to tortillas + dollop each with 1 tbsp guacamole—tasty!
