Cook time: 13 minutes
Remove bay leaf from 1¼ packages of pork; using half the pork, chop into 2-inch chunks; heat skillet over med-high, add pork + sauté 4-5 min until soft; break up pork using forks + sear in one layer 2-3 min more until crisp
Meanwhile, open the packages of rice + heat in microwave 90 sec (careful—it'll be hot!)
Chop 1¼ packages of lettuce + add to a large bowl with pork, 2½ packages of rice + 2½ packages of dressing; toss to combine then divide between plates—yum!
