Cook time: 13 minutes
Remove bay leaf from half the pork, then chop into 2-inch chunks; heat skillet over med-high, add pork + saute 4-5 min until soft; break up pork using forks + sear in one layer 2-3 min more until crisp; set aside
Boil a pot with 1/2 cup water + pinch of salt; place beans in boiling water, cover + steam until tender, about 3-4 min; drain, season with salt/pep + a drizzle of oil; divide between plates
Microwave 2 potatoes in their wrappers on high 10-12 min flipping over halfway through cook time (caution, that's a hot potato!); carefully cut in half, then set aside
Add 4 tbsp sauce to main or sides
