Instructions
Cook time: 12 minutes
Boil large pot of salted water, add 1 package of couscous + stir; cook 5 min, then drain; add to a large bowl, toss with 1 tbsp oil, ¼ of a package of dressing + salt/pep; divide between bowls
Meanwhile, heat 2 tbsp oil in large skillet over med-high; sauté 1 package of spinach + salt/pep 1-2 min until wilted; add remaining 1 package of spinach + cook 1-2 min until wilted
Pat fish dry + season with salt/pep/fave spices; heat 1 tbsp oil in skillet over med-high (get that pan hot, otherwise the fish will stick); sear 1 package of fish 3 min, flip + sear another 1-2 min (for well done cook 3 min on second side)
Divide salmon + spinach between bowls then drizzle each with 2 tbsp dressing—delish!
