Cook time: 29 minutes
Preheat oven to 475° + preheat sheet pan; peel (or don't peel!) 4 Microwave-ready russet potatoes, cut into ½-inch sticks, mix with 4 tbsp oil + salt/pep; spread onto hot pan + bake 15 min; flip, reduce heat to 425° + bake 10-15 min until golden
Meanwhile, pat 2 packages of atlantic salmon fillets dry, season with salt/pep + fav spices; heat 2 tbsp oil in skillet over med-high + sear fish 3 min; flip + sear another 1-2 min (for well done cook 3 min more)
Cut 4 strips of zest off 2 fresh lemons; heat 2 tbsp oil in skillet over med-high, add 2 packages of fresh asparagus, zest + salt/pep; sauté 4-6 min until tender + bright green; squeeze lemons on asparagus
Slice 2 packages of slow churned herb pasture butter in half + top salmon; divide all to plates
