Instructions
Cook time: 5 minutes
Heat 1 tbsp oil in skillet over med-low + pour in ½ container eggs + salt/pep, then cook undisturbed until eggs around edges begin to set, about 1 min; continue cooking, using a spoon to stir eggs until curds form + no liquid remains, 1-2 min; remove from pan immediately
Wash/slice avocado + 1 tomato
Divide eggs + veggies between plates
