Preheat oven to 400°; slice 2 ½ sweet potatoes into 1-inch pieces, mix with 2 ½ tbsp oil, salt/pep + fave spices (we like garlic powder); roast 25-30 min until tender

Meanwhile, pat 2 ½ packages of pork chops dry + season with salt/pep; heat 1 ½ tbsp oil in skillet over medium, add pork + cook 3-4 min each side until cooked through

Heat 2 ½ tbsp oil in skillet over med-high + sauté 2 ½ packages of pepper mix with salt/pep 4-5 min until soft + starting to brown

Divide pork + veggies between plates—time to eat!
