Cook time: 12 minutes
Heat 1½ tbsp oil in skillet over med-high; sauté 1½ packages of stir-fry veggies + salt/pep 3-4 min; add sauce packets, cover + cook 1-2 min more until tender
Pat 3 pieces of fish dry + season with salt/pep/fave spices (we like garlic powder); heat 1½ tbsp oil in skillet over med-high (get that pan hot, otherwise the fish will stick) + sear 3 min, flip + sear another 1-2 min (for well done cook 3 min on second side)
Meanwhile, tear corner of rice packages to vent + heat in microwave 90 sec (careful—it'll be hot!)
Divide 3 pieces of salmon, 1½ packages of veggies + 1½ packages of rice between plates—looks great!
