Instructions
Cook time: 7 minutes
Pat 2 ½ packages of chicken dry, then slice + set aside to enjoy cold (for warm chicken, heat 1-2 min per side on lightly oiled skillet)
Toast 5 pitas until warm + golden; slice pitas open along seam
Spread 1-2 tbsp hummus in each pita, add chicken + a handful of arugula to each
Tip: enjoy remaining arugula as a side salad with oil, vinegar, salt + pep
