Instructions
Cook time: 13 minutes
Heat 2 tbsp oil in skillet over med-high + sauté 2 packages of bell pepper onion saute with salt/pep 4-5 min or until soft + starting to brown; chop into bite-size pieces
Meanwhile, pat 2 packages of steaks dry + chop into bite-size pieces
Add veggies + steak to half of the tortillas from 1 ¼ packages of spinach tortillas; top each with cheese from 1 ½ packages of mild cheddar cheese slices then close with the remaining tortillas
Heat a large lightly oiled skillet over med; add tortillas to skillet (in batches if needed) + cook 1-2 min per side until browned + cheese melts; cut into wedges + serve—yum!
