Cook time: 480 minutes
Cut onions in half from root to stem, peel + thinly slice; place onions in slow cooker with ½ cup water; pat pork dry, then season with salt/pep + fave seasonings; place meat on top of veggies + cook 8 hours on low (or 4-5 hours on high) until fork tender
Using 2 forks, shred into bite-size pieces + stir in 1 pouch of sauce
Stack 8 tortillas on a plate + wrap with a damp paper towel; microwave for 30 sec or until warm + soft; divide to plates
Wash 2 packages of scallions + thinly slice crosswise, discarding roots; with 1 bag of salad mix; add salad + meat to tacos—looks good!
