Instructions
Cook time: 33 minutes
Preheat oven to 400°; slice 3 packages of organic sweet potatoes into 1-inch pieces, mix with 3 tbsp oil, salt/pep + fave spices (we like garlic powder); roast 25-30 min until tender
Meanwhile, heat 1 tbsp oil in skillet over med-high; wash 3 red bell peppers, cut off stem + remove seeds, then cut into bite-size pieces + sauté 4-5 min or until tender; set aside
Heat 2 tbsp oil in a skillet over med-high; add 2 packages of plant-based "chorizo" + sauté 5-7 min until browned
Add peppers + potatoes to skillet to combine; divide between plates + dollop with 5 packages of avocado spread
